    So, I started playing Skyrim. I'm a little dissapointed about the skilltree's, ort at least two of them. Two handed and One handed. Why is there no skill that allows you to wield a two handed weapon in one hand in either of them?

      Exactly!

      There are even some DLC-Sized quest mods with pretty good voice acting.

      Maids II Deception and Falskaar are some examples.
