Does anyone know the specific odds for digging up items while mining, or is it completely random?

I'm pretty sure it varies from area to area in some capacity... I'm not sure if anyone knows the exact probabilities of finding certain items where, but it depends on what your searching for. Fossils and plates have been the most rare for me personally.

I don't remember the exact numbers, but shards are the most common followed shortly by heart scales (though both will be very easy to obtain outside of digging soon). Stones/Evolution items are the next step up being a bit more rare (will also be purchasable very soon though) followed by the rare items. Plates, Odd Keystone, Oval Stone, and the fossils are the things you should be trying to aim for first. The fossils available are the Helix Fossil (don't resurrect until after the Order of the Helix event), Dome Fossil, Claw Fossil, Root Fossil, Armor Fossil, and Shield Fossil.

Once get one of each of the rare items I mentioned just focus on getting shards and heart scales. You will go through those things faster than a Greninja changes types.

When I go to mine I setup 3x speed hack and keep soft resetting until I get what I want.
