You'll need to get the key (which I think you already have but if not it is in the house in Obsidia Park). Then go and open the factories and you'll find them. It's set when you get the egg. If you wanna speed up getting a shiny via the daycare, check out the pinned breeding guide in the Team Showcase section, you can use CE to get and hatch eggs within seconds.
