Shouldn't be that difficult. All the story developers need to do is redirect her obsession elsewhere. So instead of Arceus-oppa, it'll be Mischi-unnie. I'm sure that'll come up in the future. Maybe part of how she becomes sane again is seeing her son again. My current hypothesis is that Kanon is her son. The old couple which gave us Magma Drift said that Anju is a kind lovely person whose cheeks turned red when smiles (or something like that). Agreed with ICSW about Kanon. Kanon lost his parents when apocalypse, I think the possibility is quite high that he is Anju's son, only Jan knows. I'm curious if V8 will feature Team Xen, or Angie, or neither.
