I actually might want to breed Guts Taillows first. I have a Jolly Swellow with Brave Bird already. But which nature is better? Jolly or Adamant?

I'd say go for Adamant. Swellow's speed stat can go up to 349 without a beneficial nature. While it's attack stat can go up to 269 without a beneficial nature.

Jolly can work as well to outspeed as many things as possible. I just kinda prefer having more power
